We usually have a subji (cauli, broccoli, cabbage and maybe A LITTLE potato :), boiled roasted buckwheat with fresh tomatoes and butter, a salad of some kind and lassi if hot, tea if cold. Also lots of fruit on Ekadasi, a bit of nuts and dry fruit. Sometimes when I have time and inspiration, I make a sweet too (gajar halava, a cake, or sweet balls). We tend to eat simple but nutritious food on Ekadasi.

You cook everything the same, if you worship Radha Krsna, if you worship Gaura, you cook ekadasi preps:-)
